everyone's different and one way isn't
better than the other...Actually, I really enjoy color correcting, photoshoping, etc.. and I think it is vital in this new time of photography to know how to handle your files. I've just chosen to spend my time in other areas that I enjoy more and can see helping my business more.
It's tough to give up control, especially when you enjoy doing what you're giving up, so for me that quote has a much different meaning than how Bresson said it. For him, I assume, that he's more interested in life, and documenting it. Once the moment has happened (and been captured by his masterful eye) he's on to see/capture something else.
Bumatay - you're right that the hunt can be ruined if not prepared properly and that's why I let someone who's better than I am do the preparing.
Another one of my favorite quotes - "Figure out what you're good at and don't do anything else."
....I have a tendancy to take it to the extreme though...
