I have seen these really cool videos made by people such as watching the sun go down within a matter of seconds. I would like a video software for this technique as well as others. Let me know which ones you use.

"within a few seconds" check out DJ's ShowItWeb, but if you wan't more control and exact music to transition timing, go with FinalCut Express or Adobe Premier.

I use FinalCut Express for the videos on our homepage and Flash to convert them for the web presentation. It's easy to learn and easy to use as well. Plus it comes with LiveType for really cool text effects.
